Good eats

I love a good salad. Who doesn't?

My favorite salad is from here and it is just their basic house salad...full of romaine, oranges, almonds, and topped with honey mustard dressing.

So tonight I was craving the above salad but I had no oranges or almonds or honey mustard dressing so I was out of luck. I was on the phone with a friend when she suggested adding some pears to my salad, so I did. Then I remembered this fancy super easy cheese I made the other day. Hmmmm I made a good one.

So here it is...

Romaine lettuce
Fresh pear slices
Lemon Cheese (thanks to Joce for the recipe)
Heat milk to 170 and add 1/4 cup lemon juice. Stir until it curds. Drain with cheese cloth, stir in some seasoning (I used garlic salt).
Low Fat Honey Dijon Dressing from Wegmans.

It was delicious!!! Really really really delicious!

I was on a salad binge a few years ago while Kevin was deployed...because cooking for one wasn't always easy. One night I had the same kind of salad craving like you, but southwest style. I looked in my pantry, and came up with an idea. First I cooked a chicken breast with some seasonings. Then I made a salad of romaine lettuce, black beans, corn, olives, cucumber, and green/red pepper. My dilemma was the dressing, but I decided to whisk together some BBQ sauce and apple cider vinegar (sounds weird, but it turned out good!). Then I sliced the chicken breast and put it on top. This was one of my favorite salad creations- so filling and delish!
It probably would be good too with some tortilla strips on top for some crunch.

I love the pecan/walnut salads with craisins. Yum. And mandarin oranges...

My MIL makes a good salad with strawberries, spinach leaves, some of the other usual ingredients and ...hmm, what is it? Some kind of poppy seed dressing. It's really good.

I like to add grapes to salad, too. Yum!
