THE BEST GF bread recipe

And it's easy...

1 cup rice flour
1 cup corn starch (or potato)
1/2 cup GF oat flour
2 teaspoons xanthan gum
1 teaspoon salt
1 tablespoon yeast
1 1/3 cup WARM water
3 tablespoons olive oil
1 tablespoon of honey
1/2 teaspoon of vinegar ( I use apple cider)
2 eggs mixed with some water to make them frothy (about 2 tablespoons)

IF you are feeling lazy just place all of the ingredients in the bread machine on a basic white cycle.

IF you want to do it the long way (and more satisfying)...prep your yeast in warm water, mix dry ingredients, then mix wet ingredients and combine. Will look wet but that is okay. Bake 350 for 80 minutes.

Just as I promised, more pictures

We had a great little birthday celebration for Miss Addy complete with cake and presents.

She loved the cake. At first she attempted to lick it but the camera wasn't fast enough. She pretty much loved the frosting but ditched the cake after a few bites. ( was a gluten free cake and not my favorite either).

She love love LOVED her new toy from us. It is an ice cream truck and sings a song. She kept dancing every time it went off. (We now have races with the ice cream truck and the tonka truck in our house...)

Overall, it was a great warm day! She was the happiest she has been in a while all day long and even intentionally said "mama" a few times just to see me smile ;o)

My baby girl is ONE!

It's official, my baby is now 1!

Where has this year gone? Seriously...I feel like it was yesterday I was waddling around the house waiting for this little "boy" to come! To MY surprise, she came out a she and NOT a he and I couldn't be happier!

We love our little Addy!! She makes our family complete!

Yes, I know I haven't updated you on my journey of the Proverbs 31 woman. BUT...God has had me reading, Crazy Love by France Chan. Let me tell you, it is a life changing book. Really!

Anyways, I wanted to share with you a short part that really struck me today.

Frances is talking about being a Lukewarm Christian. You know, the one that none of us want to admit to being. So I don't swear, I give my time to the needy, I read my Bible (and study it), etc... so why would I be a lukewarm Christian? Yeah, I am..Darn! Well he gives a lot of examples of a lukewarm Christian and this particular one really struck me.

"Lukewarm people don't really want to be saved from their sin; they want only to be saved from the penalty of their sin. They don't genuinely hate sin and aren't truely sorry for it; they're merely sorry because God is going to punish them. Lukewarm people don't really believe that this new life Jesus offers is better than the old sinful one. "

hmmmmm. I have to be honest with you, this is true. Really! Who wants to live a life in hell? Not me! But do I ask for forgiveness for my sins because I want to live like Jesus or because I am just afraid of hell?

So my challenge this week is to genuinely love God and ask for His forgiveness because my life in Him is the MOSt important thing....

She sets about her work vigorously;
her arms are strong for her tasks.

The word Vigorous is defined as "Strong, energetic, and active in mind or body; robust."

I don't know about you but I am not always strong, energetic, active, or robust when it comes to being a homemaker. Don't get me wrong, I do have some spurts of energy here and there but when the baby has been up all night and won't nap, the 3 year old poops his pants for the second time, and the 5 year old refuses to clean up her toys, I am a bit WHOOPED! (note: as I write this the baby is SCREAMING because she is refusing a nap again which has zapped my energy once again).

But here she is displayed as having strong arms for her tasks which she does vigorously. Where do you get your strength? As Christians we know where we get our strength...GOD but we don't always call on him. *insert a smack on the head here* Psalm 28:7 says, "The LORD is my strength and my shield; my heart trusts in him, and I am helped. My heart leaps for joy and I will give thanks to him in song.". There it is...He is our strength but he asks for one thing in return...Trust! Trust that God will give you the strength to be the best homemaker, mother, woman, friend, neighbor, or wife that He created you to be. The words of Chris Tomlin's song "Everlasting God" come to mind when I think about strength in the Lord.

So use Him...use HIS strength because we alone are NOTHING...hear that NOTHING without Him. I know I pray all day long, especially when I want to scream "LISTEN TO ME...I AM MOM". God does give me strength to complete the task he has given me. I know this task will change as I grow older and I know that God will continue to strengthen me.
